elebrate National Nutrition Month by embracing this year’s motto “Eat Right with Color!” Focusing on the colors in your meals is an easy way to check the balance of nutrients on your plate and a great way to work more fruits and vegetables into your diet.

The color variety on your plate reflects the diversity of nutrients in your meal. For example, dark, leafy greens, such as spinach and kale, contain high levels of calcium, folate, vitamin C, and beta carotene. Red, orange, and yellow vegetables, in comparison, are rich in lycopene, a powerful antioxidant.

A colorful plate also boosts visual appeal and engages more of your senses, increasing your awareness and consciousness as you enjoy your meal. Think about simple steps like adding a few berries to your morning cereal or peas to your pasta dish to cover more of the color spectrum.

If you’re not convinced yet, try making one of the delicious and colorful recipes from the More Matters database of 1000+ fruit and vegetable recipes. This is a great tool whether you are looking for a more inspired use of the zucchini in your fridge or need some creative ways to work more fruit and veggies into your day.
